Today we met one of our goals for the ACI project!! The dining halls have been checked twice for all of their ACI items, every SINGLE item!!! It was very time consuming and a lot of work, but it feels really good to have that checked off. Next is writing recipes with all of the information, hopefully we will be able to do some of that next week if the banquet doesn't keep us too busy. The banquet is also becoming finalized!! Everything is so exciting, it is going to be bitter-sweet to leave. We have finalized the menu and decorations, we will also be meeting with Janet and Shelly on Monday to make sure everything is a go!
We worked on the projects in the morning and the late afternoon. Mid-day we actually got to shadow Katherine and Ben two of the RDs here on campus. The picture above is a cooking class that Ben taught and Samantha showing off her knife skills. He talked to us about teaching a cooking class and some of the important factors that play into it. Some of the main points I remember are 1. Know your recipes. 2. Cook to the appropriate audience. 3. Try and sample the recipes. I thought all of these pointers were really good ones. He does an awesome job teaching this because you can tell he loves to cook, he is also a chef so that is a given! He joked around a lot and was able to answer everyones questions really well, today was awesome. :]
