Week 3 in Wyoming


Day 14: OFF

Day 15:

Today we are starting our dining room rotation and we are very excited because we really like the managers that are involved in the front of the house.  We start off by meeting with the manager, Tom, as he gives us a rundown of the place.  We then were able to follow the supervisors around and learn what they do from day to day to get ready for the students.  Being Monday, we were getting ready for a slightly larger crowd than what was normal for the summer because of Orientation for the new students.  They try to put their best foot forward on these days to give them something to look forward to.  After lunch we attended our first culinary meeting.  We are hoping that eventually we will be able to know enough to participate in these meetings, but for now we just sit and listen.  After dinner we were able to see how the front of the house is closed down.  Everyone was really great to us and we had a pretty good day.          



Day 16:

Once again, we attended the weekly manager meeting.  They discussed some of the things that would have to change with the upcoming budget cuts.  We also did a HACCP audit to check up on all of the departments.  We then followed a different supervisor to learn how she likes to run things.  It is interesting to see how each supervisor is different in the way they like things to be.  One of the most exciting parts of the day was when we got new shirts.  I know that doesn't sound that exciting to anyone else, but we were very grateful.  Before, we were wearing the same green polos as all of the servers.  They really didn't see us as an authority figure, and some of them didn't even know that we were interns.  We talked with the supervisors and they agreed that we needed a change.  They went and dug up some old navy polos that no one wore anymore.  We really stuck out then.  The employees were actually coming to us with questions and to get their assignments.  This was definitely the highlight of our day. 



Day 17:

                Up bright and early today to get ready to serve breakfast!  We are actually in charge of assigning all of the servers and dishwashers duties today.  Although we were not totally excited about having to wake up early for it, we still had some fun.  Then after dinner we were able to spend some time preparing the dining room for lunch.  My favorite part of the day was getting to test my recipe for my project.  It was my second practice run, and I finally got it right.  Ok, well almost right.  I accidentally poured too much oil in the Yakisoba so I just need to be more careful next time.  People seemed to really enjoy it.



Day 18:

                We definitely have the flow of the dining room down now!  We do pretty well in running the dining room, if I do say so myself.  We worked a little bit also on scheduling employees, but then had to go work more on our projects.  Sara will be making her main dish tomorrow so we learned how to get our recipes into the CBORD system.  It was a lengthy process since we didn’t have much experience with the system.  After that, we were able to go back and help with the dinner shift.  Since it is a Thursday, we had a higher count because it is also an Orientation day. 



Day 19:

                The Friday Curse still stands.  It was not super cursed like our past Fridays, but we still have yet to have a good Friday.  Sara had to serve her dish today.  There was a lot of setting up to do in order to make sure we could also get feedback on the recipe.  I was running around everywhere trying to get everything in place.  I didn’t realize that Sara had been running behind on her recipe.  The prep for it took longer than we thought it would.  We ended up running about an hour behind because it was an Indian stew and took a long time to cook.  We missed the rush when we put the dish out, but we were still able to feed 2/3 of it out.  After the dish was out the rest of the day went smoothly, and she got really positive feedback on it.  I believe they are going to add it into the dining rotation!  I hope that next Friday will be better because I will be serving my dish!  Though, I do have a lot to live up to with Sara having set the bar so high.



Day 20 and 21: OFF
